Several cultures traditionally make Christmas desserts that are inherently low-carbon, such as biscuits (roughly 2.75g CO2e per kg). But though Polish pierniczki świąteczne, Icelandic piparkokur, and German pfeffernusse all sound delicious, I can't help pining for the cuisine of Dickens novels and Victorian Christmas cards – the plum pudding. Nothing quite says Christmas like a dumpy dessert that no one really likes, but insists on having anyway.
